This super-summery salsa is a great pick-me-up and filled with fresh, vibrant flavours. We’ve served it with our Tasmanian free range smoked chicken breasts for a quick and easy meal. Double the recipe and you’ve got lunch sorted too!
Serves 2
- 1 large mango, diced
- 1 avocado, diced
- 1 Spanish onion, diced
- 1 crisp apple, diced
- ½ bunch coriander
- Juice 1 lime
- 1 tbsp olive oil
- Coarse salt
- Cracked pepper
- 1 Lime wedges, to serve
Place mango, avocado, onion, apple, coriander and juice in a bowl with olive oil and a good pinch of salt and pepper.
Gently toss to combine and serve with sliced chicken breast and lemon wedges.
