Summer often calls for a pasta salad and this Mediterranean pasta salad is full of flavour. This is a great recipe if you have vegan or vegetarian friends to feed. The Lello pasta is vegan too!
Don’t throw away the oil the olives and dried tomatoes come in that will become your salad dressing.
1 x 400g pack pasta of choice, we’ve used Lello Pipe Rigate
1 x 200g tub mixed pitted olives, we’ve used Nevia Foods
1 x tub semi dried tomatoes, we’ve used Nevia Foods
½ Radicchio, sliced
A big handful beans, top and tails removed and sliced lengthways
1 punnet cherry tomatoes, halved
A big handful baby spinach
1 x Spanish onion, sliced
½ bunch parsley, roughly chopped
Salt & Pepper, to season
