Warm the hummus just before you eat it. It’s a taste sensation!
Allow one medium eggplant per person and a couple of tablespoons of hummus.
Turn a gas flame cooktop to low and char the eggplant. Keep it moving over the flame until it softens and slightly collapses.
Place a couple of tablespoons of hummus on a plate.
Scrape away the burnt exterior of the eggplant and lay it on the hummus.
Season with salt and pepper and scatter over a tablespoon of sesame seeds.
