Try out this Pan Fried Honey & Lemon Halloumi, and Grape Salad using Will Studd selected Aphrodite Halloumi and green grapes. We used the seasonal #Autumn Crisps for extra crunch.

For salad –
• 1 head baby cos lettuce
• 150g green grapes,sliced
• bagel croutons (any crips croutons will do)
• fresh dill sprigs
• halloumi preparation as per instructions below

For Halloumi
• 1 pkt Aphrodite halloumi
• 2 tablespoons honey
• 2 tablespoons extra virgin olive oil
• 1 teaspoon chilli flakes
• 1 teaspoon sesame seeds
• pinch of dried oregano
• juice of 1/2 lemon

Slice halloumi into roughly 5mm thick pieces. Combine all remaining ingredients to form marinade. Combine with halloumi and allow to marinate for 15 minutes. Remove halloumi from liquid and pan fry on medium high heat until nicely caramelized on both sides. Set aside remaining marinade for dressing.

For croutons, we sliced up 1/2 a sesame bagel and pan fried in a small amount of extra virgin #oliveoil.

Assemble all ingredients in your desired dish, using the leftover marinade to dress your salad.
