Garlic Roast Potatoes & Shallots

Serves 6 as a side

The good-old roast potato is a classic on the Christmas dinner table, but we’ve taken it up a notch with our favourite brand of goose fat.

You can also use duck fat or olive oil.

  • 1 kg kipfler potatoes
  • 8 shallots
  • 1/2 cup goose fat
  • 6 sprigs Rosemary
  • 1 head garlic
  • Salt & pepper

Preheat oven to 165 degrees.

Peel the potatoes and slice large ones through the centre lengthways.

Cut shallots in half lengthways, leave the skin on.

Separate garlic cloves and squash with the flat side of a knife.

Place shallots, potatoes, garlic and Rosemary in a large roasting dish, add goose fat, salt and pepper and toss to combine.

Roast for 25 mins, turn everything over, and roast for a further 25 mins or until the potatoes are cooked through and golden.
