Fennel, Orange & Pomegranate Salad

If you’ve realised your a salad short for Christmas this one will certainly impress.

It’s a refreshing side and is bursting with citrus flavours.

Perfect for those long summer BBQs.

  • I fennel, sliced
  • Juice 1 lemon
  • 5 oranges, peeled and cut into wedges
  • 1 pomegranate, seeds removed
  • 2 witlof, ends removed
  • 2 tbsp olive oil

Spritz the fennel with lemon juice and arrange on a plate.

Add the oranges, witlof and pomegranate seeds.

Drizzle over olive oil.
