Baked Corn on the Cob with Coriander and Chilli

This sunny baked corn will brighten your day!

  • 4 corn cobs
  • Olive oil
  • Coarse salt & pepper
  • 1 heaped tbsp butter
  • 1 chilli, chopped
  • Handful fresh coriander, roughly chopped

Simply peel back the husk, dispose of the hairs, and ties the ends of the husk with cooking twine.

Rub corn with olive oil and season with salt and pepper and roast for 20 mins at 180 degrees.

Rub cooked corn with butter and scatter over chopped coriander and chilli.

Super simple!

TIP: You can throw it on the BBQ once roasted for a little touch of smoke and fire!
